Preparing the Base: Spinach Lining
First, we bake fresh spinach in the oven to expel extra moisture. Then, once dry and flexible, we line the mould with it. This layer adds a vibrant, earthy base that holds the filling beautifully.
Layering the Filling: Pigeon, Duck Liver & Chicken Mousse
First, we spread a smooth chicken mousse inside the mould. Next, we place a brined pigeon breast in the centre and add more mousse around it. Then, we add a rich piece of duck liver and another layer of mousse. After that, we top with a second pigeon breast and finish with a final mousse layer. We fold the spinach over the top. Finally, we freeze it for about 20 minutes so it firms up before pastry wrapping.
Wrapping in Pastry: The Art of the Pithivier
Once set, we wrap it in our signature puff pastry, forming its classic golden dome. We brush on a thin coat of egg wash for that glossy, caramelised finish. After chilling, we add a second coating. Then, we score an elegant pattern with a small knife—this detail reflects traditional Pithivier craftsmanship. At last, we bake it for 18 minutes. Meanwhile, the crust crisps perfectly as the flavours meld.
The Final Touches: Chargrilled Broccoli & Pigeon Sauce
